Putting my hybrid on a diet.What is a decent quality.very light,carbon bar & stem?
Price is not my main criteria,quality & weight are.light + reliable + cheap = choose two
you do not state how much you are willing to pay.
light but not outrageously expensive 110 mm , ritchey wcs c260 103 g for £ 50 ish
o/s hylix 600 mm fkat bars bars 124 g for £ 30 ish (ebay)

Most riding is on tow paths,parks & other not quite smooth surfaces.In which case be careful, and read all the descriptions carefully. There is lot of carbon wrap stuff out there, no lighter than alloy.
If you are serious about weight reduction, then Easton Haven Carbon, or Easton Monkeylite EC90 are a possibility.
Chain Reaction have some bargains int eh bars department , I think they were doing reduced Answer Protaper Carbon for about £85 last time I looked. I have a pair of those and they are lovely.
What sort of riding do you do? If you don't need wide risers there are a lot of good bars about in the "unfashionable" less than 700mm sizes!
Carbon stems..... hmmmmm won't save much here in terms of weight over some quality alloy.
Have you lost the cheaper weight on the rest of the bike, like tyres, wheelsets, saddles, cranset?
Got the trp carbon on the Sirrus,got a set of magnesium in red coming for the Roubaix.There is only one full carbon stem of note imho and that's the hand wrapped Zipp SL145.
The s-works chain set is only worth it if you go the whole hog, s-works carbon crank with carbon spider (avoid the alloy spider).
I tried a number of carbon calipers and found many flexed quite badly, I eventually settled on TRP which are well finished and perform exceptionally well. They look great as well IMHO.
