There is an unmarked T-junction in my local gym car park with 'NO ENTRY' written across it. Am I correct in thinking that this is advisory and not mandatory as there isn't a metal sign (like the one below) there as well?

Assuming the gym own the car park, then rules re signs and markings are set by them and may differ entirely to the conventions of the road. If its clearly indicated as no entry you should obey, even if the signage is otherwise absent or different to the norm.

However, it's still a public place so you can still be had for drink driving, dangerous driving, and the like. So, come a cropper while contravening a no entry marking, even if it isn't to National Highways standards, and you'll potentially be in the sheet.
