I believe it is the plastic, often quite big and slightly curved guard that sits between the rear cassette and the spokes of the rear wheel.

They tend to be found more often on road bikes and their purpose is to stop the chain unmounting and tearing your spokes apart. However, with a properly maintained chain and correct gear indexing they really aren't necessary.

Why a pie plate? No idea, but like many I find them ugly and 'pie' is presumably derogatory. Unless of course there is actually such a thing as a pie plate, on which one places a pie before devouring it?

There are 2 sorts of pie. Dish pies, and Plate pies. Dish pies are deep and baked in a dish. Plate pies are shallower, and baked, as you might guess, on a Pie plate.... Well, it's just a plate, really.

Mac66 your description is right, why they are still about is a mystery, with modern transmissions they should be unnecessary, when we were all on 5 or 6 speed blocks and indexing hadn't been invented it could happen that you would to go fishing for bottom gear and end up putting the chain in the spokes.
Which is how I ended up limping home one Sunday having not even got to the start of the reliability trial I was planning to do, I got the chain tangled up in the spokes trying to find bottom gear on a climb on my way to the start, after that I fitted a pie plate and used one right up to when I got a bike with a modern indexed transmission. Why they are called pie plates? I haven't a clue.

...and because leaving these things on categorises you as a Newbie! Same as spoke reflectors and the little bells; things to be ripped off to define the rider as a proper cyclist. Allegedly.
