Why do the modern suspension forks not have the rubber covers over them? Do they need more maintaining? Also what grease is best to use on them please? I know a little about bikes but im trying to make this one more suitable for light offroading as ive wrecked cheaper bikes in the past partially coz of my weight and the other because they were cheap and not up to the job! Ive got an old giant sedona which is in good condition! Would I be better off getting the parts for it or just getting an offroad bike and make it a bit more of a road bike? I am in beginners section so please bare with me!

As far as I remember, the older versions had them to protect the uppers (stanchions) and seals inside the fork. New forks still have them, but they're little rubber rings at the top of the fork lowers.
Marine grease is good, I used it on my old cross country bikes fork.
I personally would buy a proper off road bike. A cross country (XC) hardtail would be good (and cheaper in many terms) than a full suspension. Look out for GT Aggressors or Avalanches (used) as they're very good but unpopular, as to why they sell cheap ( models 2/2.0 3/3.0)
I would turn the Sedona into a hybrid with some semi-slick or full slick tyres. Best Semi-Slicks are Michelin Country Rock, best slicks are Schwalbe Kojak. If you can, get a rigid fork too for it, as the RST fork will end up breaking or seizing in the end, they're very cheap forks.
