I don't think you need to switch off the GPS, It's my understanding that if the edge 500 detects the presence of a cadence detector it will always use that in preference to the GPS for calculating speed/distance because it's more accurate than the GPS.
^^ This man speaks the truth. I've had a garmin 500 for a couple of years now and it has always opted for the sensor over the GPS reading when the sensor has been recognised.
