How many speed is the bike. Specifically how many cogs on the rear cassette and on the front crankset?

Your Viking seems to have a rather strange shifting arrangement, but it should be possible to swap them out for 105 flightdeck shifters. Not sure if they are still called flightdeck though. But you will likely end up spending more than 50% of the bike's value doing it! Is it really worth it?

With those handlebar mounted shifters I suspect it's a 14 SPEED?

If so then 7 speed STi's are like hens teeth. You may be able to use 8 speed ones, (you'll just have a redundant extra click), but even if you can I have to agree with Cycleops, the cost would outweigh everything else.

I'd look into selling the Viking and upgrading via the second hand bike route.

Depends, 7sp can be had on ebay for £20-30.

The 8 would work with with a 7sp cassette but it's not perfect, if it will take an 8sp cassette, they are 3.5mm wider, 0.2mm from sprocket to sprocket, it would be easier just to get an 8 speed cassette and shifters, new cables £60 should cover that, but as Vikings usually come with a 52/39 front it will be pretty high geared, the 8 speed could help there, but the rear mech might not cope.
I have all sorts of setups on mine in the last 12 months some have worked better than others.

These are a set of 8x2 sora shifters, double on the front and 8 on the rear, they will probably go for the £30-40 mark.

A good replacement 8sp cassette
http://www.wiggle.co.uk/shimano-hg50-8-speed-cassette-road/
£18.99
Chain http://www.wiggle.co.uk/kmc-z8s-8-speed-chain-with-116-links/
£7.19.
New gear cables and cable ends.
Just check if where the gear cable goes down the down tube that there is an adjuster barrel.
There is also this, a 7 speed

you wouldn't need to change the rear or chain for this, just these and new cables.

I have done over 7,000 miles on my sora, 6,500 in the last 12 months.
Also on my Viking I am achieving speeds which match my contemporaries, well I am as fast as some club riders on certain segments on strava.
I didn't do a long ride today, but I managed this,

it's only serious riders or those that have been riding sometime, that really go faster, so don't be put of by what others may say about the bike.
