Fitting Calliper Brakes - bolts too small

I bought these calliper brakes for my singlespeed build :

The bolts which goes through the frame or fork were too short. How do I know for when I reorder the next brakes whether the bolts will be long enough?

can't you just get longer bolts instead of replacing the entire caliper?

That is what I asked the bloke in the shop and he said no

Are there not longer recessed nuts available? I have seen a variety of lengths on bikes I've been working on.

EDIT: something like this. Have a browse as SJS stock a lot of bits and pieces which can be used to solve problems.
