How the hell do you get it 5mm from the sensor, without fitting some sort of packing behind it to get it close enough??

Cadence magnet goes onto the crank arm as per instructions. Loosely tie wrap the cadence/speed sensor to the frame, and angle it outwards towards the crank arm to achieve the required gap. I find that you can have a greater than 5mm gap and it is still reliable. I know it looks as if you will kick it off with your heel on each turn of the pedals but you won't.
Speed sensor is the funny little arm thing, and can be adjusted by loosening the Phillips screw, moving near enough to the magnet then tightening it.

yeh i've done all those things, need to slide a little bit of plastic between crank arm and sensor i think, just to closevthe gap a touch.

Spin the wheel/crank arm (best on stand) ...look at your hand set and move the cadence censer arm until the hand set picks up a signal ...

The Garmin GSC10 has a bi-colour LED so you can do all the setup without a head unit.
I think the OP has fitted the sensor nice and tight, before the crank magnet...

ok - my spoke sensor for some reason is sending stupid speeds to the unit, then when i turn the magnet around it shows the correct speed. checked by using the speed sensor on my elite turbo. magnet the correct way 32mph, turn magnet around correct reading of 17.2mph.

Why???
