Triple mech will of course have adequate side to side motion for a double. Not sure about your BB length though. Probably have to suck it and see.

Can't see why not.
The triple mech will be a different shape in its lower cage, to accommodate the chain's path were it on the lower inner ring that isn't there, so that won't affect anything.
The 109 or 118mm bottom bracket is to accommodate the different width of the chainset, nothing to do with the mech - the triple, having three rings, is wider than a double so has to have its mid-line further outboard to clear the frame.
So assuming there's enough adjustment (which I bet there is) on the min-max screws to limit chain movement to the two rings, where the inner and outer on a triple would be further to left & right, can't see a problem.
