You've got loads of great riding on your doorstep, New Forest, South Downs (head Oswelbury, Cheriton way), or Stockbridge / Salisbury way but you'll need to do a bit more than 3 to 8 miles. There are some nice loops of 20+ miles which isn't very far on a road bike, even for a begginer.

Bishopstoke, Fisher's Pond, Brambridge, Allbrook, Boyatt Wood?

The lanes north of N. Baddesley are nice and quiet, and the bit of the A27 you need to make it into a loop mostly has a cycle track (NCN24) next to it. That cycle lane continues along Castle Lane most of the way to Eastleigh.

But as Dave says... you need to get out to around 20 miles to make a nice loop.

Eastleigh, Bishopstoke Rd, Allington Lane, Mansbridge Rd,Widelane and back to Eastleigh
there and some great rides in and around North Baddesley and up to Stockbridge all on country lanes too.

I used to live in So'ton and work in Colden Common, and commute by bike, but that was a few years ago, but from what I remember, the route from Eastleigh to Colden Common could include Bishopstoke hill or Fair Oak, so you could do a circular route taking in both. Otterbourne Bridge I also remember as being very pretty.
