When using my phone to search for information.........I find a site that looks useful and click on it.....only to find, many times, a banner saying I have to consent to their use of cookies.
Sometimes I think "ok, I will accept" but in most cases I dont want companies I have never heard off checking on me.
Is it possible to by-pass this and still get on the site ?

In most cases, yes. How you disable cookies depends upon which browser you're using, but disabling all cookies will break most sites. e.g. if you disable all cookies you'll no longer be able to be "logged in" to any site or add anything to a cart or anything dynamic like that. And a lot of sites will straight up refuse to work without cookies.
However: In Chrome's privacy settings there's one that says "allow third-party cookies" which will block most of the trash if you turn it off and will be less damaging to your experience than blocking everything.
As of this year Firefox has tracking protection built-in.
Can't speak for Safari but Apple have always put a big emphasis on their privacy stuff.

Despite being a major PITA, the popup is a good thing because it's informing people about how insidious the online ad market is when there are literally thousands of companies listed under these things. Though I suspect most treat it just like an End User License Agreement and just scroll past without reading

I don't mind the pop-up, provided it gives me an easy way to reject those cookies that aren't necessary to access the content.
What really pisses me off is, for example, road.cc's pop-up which lists all the tracking cookies used by 3rd parties with an on/off button beside each one and you've got to enable/disable each one individually... there's over 350 of the feckers!

Oh, they've helpfully put an 'accept all' button at the top but not a 'reject all' which I've seen other sites use.

I've stopped using that site now and told them why. That'll show 'em!

It's since the GDPR rules that sites have to get your permission to use cookies every time you log in .
Before that they just did it anyway .
Shaun got us all to accept cookies as part of his new terms and conditions after the new rules.

You can delete cookies from your devices with a cleaning app. I use CCleaner.

Thanks @Edwardoka and @glasgowcyclist .
So.....as an eg this morning I was searching for info on safety glass and the one good site I found had this cookie banner. If I accept that to enter the site what is worst that could happen? Just more pop up ads or worse?

Generally the worst is that companies will track your browsing patterns to tailor adverts, tell product recommendation systems what you like or sell this data to marketers. e.g. you buy an angle grinder off Amazon and then you're seeing angle grinders on every site you visit.

Clear your tracking cookies after each session and it makes it harder for them to track you. Also, don't click third party ads - that just encourages them (sorry Shaun)
