Co2 cartridges

Out on a ride the weekend with a group and tthere were quite a few p**nctures and it made me wonder about my own plans
I carry a small hand pump which I doubt would get to anything like a decent pressure but I also carry a CO2 cartridge but have never had to use either - touch wood

If iI had to use the CO2 is one cartridge too much for a tyre on not enough?

The cartridge I have does not have any control/switch you just screw it on and thats it - one go - all gone!

You need to look at the packaging that came with it as it will tell you the pressure it will put into standard tyres. Normally one cartridge will fully inflate a 700x23 tyre to the max pressure, i.e. 120psi or thereabouts. Huge mountain bike tyres would require two or more cartridges.
