Are you asking the other-way-round question, i.e. can you use a 10sp rear mech with 9sp shifters/cassette/chain ?

Yes.

The front and rear mechs don't 'know' how many gears you have.
The shifters pull a certain amount of cable, the mech moves that much sideways.
A 10sp shifter pulls slightly less cable than a 9sp shifter, which in turn pulls slightly less than a 8sp shifter.
The mech moves as far as it needs to, the amount for a 10sp or 9sp or 8sp cassette respectively, because the shifter has pulled the right amount of cable.

Sorry to jump in on your Q naffets, but i was only thinking tonight...

I've got a nearly new 9 speed Veloce cassette...but my 9 speeds bikes gone now, been replaced with a 10 .
So, can i use any of the 9 speed individual sprockets on a 10 speed cassette ?...before i ebay the whole thing.

Anyone any idea ?

the only rule is: cassette and shifters have to be the same speed, mech and shifters have to be the same make*. Other than that, you can mix and match. Chain ideally at least the speed of the cassette, i.e. as thin or thinner, but will still work if not, just not quite as smoothly.

* or of that manufacturer's appropriate cross-compatibility line.
