Is it just a case of putting a QR Skewer in ?

I've never done it myself but I don't see any reason why you couldn't change the axle for a hollow one and QR skewer. Just make sure the new cones are very close match for the original.
 
You could get a hollow axle but then you would have the potential for the wheel slipping out of position if the QR grip is not strong enough.

I'd stick with the current set up or have a look round for those winged nuts they used to have.

Years ago i changed an old 6 speed nut hub to a QR one and apart from saving a few seconds taking the wheel off are you gaining anything?

Assuming your not racing and time is essential in the case of a flat and you have the tools i cannot see the benefits personally.

My bike has hollow axles and QR skewers.

I've never had any problems with wheel slipping. It just makes taking the wheel out whilst out on the road that bit easier and no need for too many spanners.

Agreed depending where you are leaving the bike too, quick release can sometimes be a disadvantage, it's too easy for the thief to remove.
