Can anyone recommend a good vegetarian cook book?

It's for my old Mum, who lives alone so most recipe books tend to be overly complicated.

She just wants some good basic, easy to prepare recipes. Any recommendations?

My mum bought this when me and my sister went vegetarian. All the recipes are very easy to do and she likes some so much she still cooks them for herself even now we've left home.

Bean Feast by Rose Elliot.

It's not totally vegetarian but a large number of the recipes are. They are also quite easy to prepare and international.
