Where can I buy crimping cable ends? I have found several places that sell 500 in a jar but I don't suppose I will ever use that many in only one life time.

Go down to your LBS, they will probably have a jar similar and I'm sure they won't mind giving you a handful in exchange for a few pence and/or you buying something.
I know I keep saying this but why use cable crimps? They tend to cause the cable wires to splay and unravel and this gives problems when maintaining brakes and gears.
I've found that using heat shrink tubing does the job and is much kinder to the cables. A Heat gun or even a Hair dryer can be used to shrink this.
Or even easier, a dab of superglue.
Tried this but not ideal as it still tends to undo.
Suggestions of soldering are not helpful usually as stainless steel cables don't lend themselves to the usual soldering techniques.
Agreed. Soldering worked very well for me when I had access to the resources of the workshop in my university physics department. Once I became dependent on domestic soldering irons and ordinary fluxes, I've never achieved satisfactory results.Tried this but not ideal as it still tends to undo.

I don't know what heat shrink tubing is but it sounds like a solution - what is it?I know I keep saying this but why use cable crimps? They tend to cause the cable wires to splay and unravel and this gives problems when maintaining brakes and gears.

What size/s do you use?It is essentially a piece of rubber tube, you place it over things such as cables and then you apply heat to it. When this is done it shrinks (hence heat shrink tubing) and contracts to form a rubber seal.
The results are similar to dipping it in a pot of molten rubber and letting it cool and harden, the only real difference is this is a lot less messy and dangerous.
