Brake pads, how to choose

It is time to replace break pads in my B Twin Triban 3 road bike. In the past, I used to take it to the LBS but now I want to replace it by myself.
I looked at various websites and bit confused by various specifications. So few areas to clarify..

What size? There are 50, 52 and 55mm. Does that matter?

Will the following work?

Don't bother with integral/moulded ones. Just get shimano compatible carriers and pads like these :-

I run these and they are great in all conditions, and aren't harsh on rims. Cheap and stop on a sixpence.

If you dont mind white brake pad holders these are very good and come with another set of pads so work out cheaper overall, obviously you would need a set for the front and the back.
