Fixed wheel fanatic.
I've got a pair of saddle mounted cages on my fixed. The cages are cheap aluminium ones like this:

Despite having bent the tubes in a bit, the bottles still keep escaping when I hit the bumps. I lost my bottle today on a 30mph descent so I have decided to replace the cages. Being behind me on the saddle means that if it's tricky to get the bottle out and in it won't be much use either.
Any recommendations?

Elite cages are pretty good, they hold the bottle really well.
I don't use them based on appearance more than anything, they don't look as good as they really are.
I generally use Zipp bottle cages

I started using bbb speedcages about 5000 miles ago as I liked the design and was fed up with the plastic ones of similar design breaking.

The Elites. Good enough for pros, good enough for anyone else. Secure, yet flexible, don't rattle, don't break.....

I have got a pair of Arundle mandible cages on my good bike. They are pricey but the bottle is extremely secure.

They also do non carbon cages which I am sure also have a vice like grip.

I use 2 of the Elite Sior bottle cages which you can get for £8.99 each and never had an issue with them.
