I've been given a packet of black rice and am after cooking suggestions please.

I think it's proper black rice like what's here on wikipedia rather than dyed. The only useful instruction on the packet is to cook it for forty five minutes, and that's all it says.

I'm thinking risotto?

From the same source there were some dried mushrooms, should I rehydrate them with warm water and chuck them in and use the water in the stock? The interclick seems to suggest 10 minutes is ok in the water. I've not cooked with dried mushrooms before either.

IIRC black rice is seriously long grain, and might not work well in risotto.
I treated it more like couscous and had it with something spicy with a lot of runny sauce, tagine sort of thing.
It was nice :biggrin:

is it black rice or wild rice? wild rice is actually a grain not a rice.
If it is china black rice here's one to try probably too late now but maybe next time

China Black Rice
It cooks very much like a non-glutinous rice. It has excellent texture,
color and flavor. It has a nutty taste, soft texture, and beautiful rich
deep purple color.
Uses
As a Pilaf
Steamed and plain and served with a stir fry dish or a curry
Recipe
1 cup black Chinese rice
3 tablespoons butter or ghee or oil
1 medium yellow onion, diced fine
2 cloves garlic, minced or 1 whole red dry chili or 1/2 small green pepper
minced (optional)
Water to cover plus 1 inch of water
1 tablespoon toasted sesame oil
Sauté the onion in the butter till clear; add the garlic, Add rice, water
and bring to a boil. Reduce to a simmer, cover the pot tightly and cook for
approximately 30 to 45 minutes or till the rice is soft but firm. Add more
liquid if rice dries out during cooking. Fluff rice when done and add sesame
oil.
Enjoy with a curry, sweet and sour dish of stir fry.

I thought all rice was a grain.

Although my knowledge of crops is limited to what we can grow here, I think you mean that "wild rice" is a form of grass but I'm pretty sure that all rice is considered a cereal grain crop.

Thanks all, from translating the packet (italian) I think it is chinese black rice rather than wild.

Risotto is out and Rodge's recipe is in, maybe with a bit of lamb.
