I'll start it off.

Gear mech' was a 'Derailleur'.

Drop handlebars were 'Racing bends'.

Handlebar tape was 'Ribbon'.

Tyres were 'Outers'.

Brake calipers were 'Stirups'.

A cycle computer was a 'cyclimeter'.

Quick release was 'Quick nut'

weren't toe-clips rat-traps

This i'd be better off in Cafe.

Cross tube - Top tube
Bidon - bottle

I once read somewhere that a lot of these changes started happening after Greg LeMond won his first Tour.

That was a kind of 'red herring'. If I'd said

Cycle computer was Huret cable speedometer,

You'd only have laughed....

I don't remember red herrings ever being fitted to bike but I do recall shark fins to keep the chain off the chain stays.

The changes started once a yank had learned to ride a two wheeled bike without stabilisers.

They are still "Outers" or Wired-ons". A clicher is what my arse does when hearing some of these expressions.

block became cassette

I believe that a block is freewheel, a cassette is a new, different part. A block/freewheel screws onto the hub and has the ratchet built into it, a cassette is a splined fitting and does not have the ratchet built into it
