I use a lot of lube and oil on my freewheel, crank set, and chain. I have noticed a build up of grease on these parts.

Could it cause a problem to the bike?

It can gather dust and change into a grinding paste. Excess should be wiped away.

Better than being dry. I think the Grinding Paste theory is mostly bunk, but a clean and fresh lube is a good idea on a regular basis. What's most important is that there is lube on the inside of the chain rollers, the rest is cosmetic.
DON'T DEGREASE.
To clean either:
Babywipes
Very very small amount of WD40/GT85 on a rag and pull chain through
Mickle Method: Lube-Wipe-(Lube-Wipe) x n

At this time of year excess lube is no bad thing.
