excuse my green ness but will i still be able to use my Shimano Altus – EZ Fire Triggers and brake levers on this bar?

Long answer: All (modern) bars are the same diameter where the controls / grips / bar ends are - it's only section that mounts into the stem that is usually a larger diameter. You might need longer cables though.

Short answer: Yes.
