I find winding on bar tape a pain in the Alice B, I have to be honest.
I started to have a serious look at the technique and there are some excellent videos out there - anyway this was my thought process.
The most important part is the flat section between stem and brake levers because:-
a) this is where my hands are placed mostly.
b) this is the most visible section when riding.
c) this is the most difficult to judge re. overlap and to make tidy at the finish.
So I decided to start at the stem rather than the bar end. Result:-
a) much tidier end near stem.
b) nicely overlapped section on the straight bit.
c) finishing was difficult but with a bit of glue and a screw in bar end all went well in the end.
d) because I started on a flat straight part I was able to get into the swing before the more difficult sections.
I have not ridden the bike yet (minus 39 with wind chill) so I don't know how it feels but it looks good.
