Currently have 11 - 27 but big run with serious climbs so thinking of going 12 - 30. Bike has SRAM force so will deraileur cope with this. I've also heard that shimano cassette with shimano chain better option than force ?

If it's a standard short cage force mech then you'll only be able to go to 28T. If you wanted a lower gear then you'd need to replace the mech to one with a longer cage, and probably need a new chain as well.

Do you have a standard double, compact or triple at the front?

Edit: my choice would be SRAM cassette with KMC chain but you can't go too far wrong with most SRAM Shimano combinations.

You're not going to notice much difference, why don't you go for 32t cassette. You will need a med cage rear derailleur plus the chain.
